Okay it's HOT and too HOT for the heavy food! Any good suggestions for light summer meals? Please include recipe if you can. I have been eating this bowl to lose weight, and its actually really good. I get it from a local restaurant, but it is so easy to make yourself. Zaba Bowlcubed chicken breast, season with lawry's seasoning salt, & lil lemon garlic pepper. grill Serve over some Jasmine rice, or regular white rice. Add: Cheese sour cream, Pico de gallo (diced tomatoes, onions & cilantro, 1 jalepeno, & salt to taste) Shredded Roman leaves Mix it all together, and viola! You can also substitute the cubed chicken, for steak, and if you are a bean lover, you can add black beans to the bowl also. Also another recipe which I cook. My husband loves this dish: We call it Stir fry..lol You will need: 1 whole Cabbage (to cut & shred) Shredded carrots or thin baby carrots will work Cilantro 1 package of shrimp 1 package of crab meat/ or imitation 1 package of lobster meat/ or imitation Seaoning salt/ or Old Bay Garlic Salt 1/4 cup of oil so your food don't burn in the skillet Cook food in portions on medium heat. add just a little of the oil to coat skillet, add some of the shredded cabbage, and carrots. Add seasoning salt, and garlic salt - fry once done pour in pan or large dish use a little more oil, add your shrimp, and lobster meat, season with garlic salt. cook until done. but don't overcook shrimp. pour in pan when finished. If you still have cabbage, carrots left over, and meat left over. Cook cabbage and carrots first, then add in meat. be sure to season this also. Once all ingredients have been cooked and poured into large pan, mix it together, and serve. You can serve over rice..but we eat ours with yams. lol

summer time is also a good time, for a good grilled burger, topped with some mini portobello mushrooms, provolone cheese, lettuce, tomato. and some steak fries..lololol

Another good recipe:
Boil some spaghetti, or pasta noodles, any kind dice 1 whole tomatoe finely chop 1/2 an onion dice 1 whole cucumber
drain pasta; in a large bowl add the pasta noodles diced tomatoes, diced onion, diced cucumber, Add: 1 cup of Creamy Italian Dressing, (paul newman's is really good, or kraft light done right Add: 1 cup of Parmesian Cheese
serves about 4. You can always add more italian dressing, and Parmesian cheese to taste preference
mix it all together, yes sir..it is good. You can also bake some garlic bread..or Texas Toast with the parmasian cheese toping.

I think that summer is really the season to enjoy all the fresh stuff that we can find. Like Jasmine, I go for salads. No "cooking" time, who needs it when it's hot, and still of the flavors under the sun. Any base goes for salads, pasta, rice... I like taboule, the base for this one is couscous semolina. It's a snap to make. So, here it goes: Start with: - 250 grs of couscous grain - 1/4 liter of water (add a little more if you like yours "mushy") - Salt Add 2 or 3 spoons of olive oil in the water, salt, and bring it to a boil. Put the couscous in the water, stir just to even up, put the lid back on, take it away from the flame, let it absorb the water (about 10/15 minutes). Then, put the grain in a bowl to cool it faster. - One big tomato diced - Boiled eggs, chopped - Shredded lettuce or any other salad you like - 1 small can of corn - Grated cheese (any you like. I use crumbled Feta cheese in mine) - Sweet peas, cut green beans (any "green" veggie you can put your hands on - You can add then any meat, shredded, cubed, that you like: chicken, shredded pork of beef, if all you have is canned salmon or tuna, it will do too. Add all that to your bowl of cooled couscous, give it a good stir. Use the dressing that you like, keep in mind that the grain will keep absorbing so, don't be "too" generous. If your really want to make it like they do it "there", add just a few leaves of fresh mint cut really fine (dry mint will do too, again, don't be too generous, the flavour would take over everything else...) Cover tight. put in the fridge, that's it! Now, who want to come to the patio with me and have some iced tea?
