I am sitting here at work wondering what to cook for dinner....any ideas?
Yes, I am serious and I don't want anything too heavy and/or fattening.

LOL!! that is simple..You can buy the salmon stuffed, just season it the way you like, making broccoli takes 10 minutes and rice takes 7-10 minutes...stuffed salmon takes maybe 30 minutes.

Take some chicken, pull off the skin. Boil it (preferably in a pressure cooker) use plenty of seasoning: ground garlic, adobo if you have it, black pepper, cajun seasoning, some lemon juice, and whatever else you prefer, rosemary is always good too! Then debone the chicken once cooked... shredd it with a fork, then get some small tortilla shells, (not the huge ones), heat them to your liking..get your cheese, and grab you some salsa, some jalepeno peppers if you like, and whatever else you want (lite sour cream), lettuce,, and roll up some good ole chicken soft taco's... they are great! Get some refried beans too ( ) For a side item you could do boiled corn, or make a small salad.... and any left over chicken can be used later for sandwiches, put some barbque sauce on them, load it on a bun, and have a good time!!!
